Hearty Vegetable Kielbasa Soup with Lentils

This cold Massachusetts weather has me craving some nice warm and hearty soups. This veggie and keilbasa soup is just what I was looking for! It has tons of antioxidant filled veggies and fiber and fiber packed lentils. Although I wouldn’t recommend making kielbasa a staple in your diet due to its high sodium and fat content, the fairly low amount per portion makes it a delicious treat every once in a while. I chose turkey keilbasa for this soup because of it’s lower fat content. It also gives this soup tons of flavor.

 Some of you may not have had the opportunity to try lentils before. Here’s a quick description. Lentils are a type of legume or bean that are found dried in the shape of small disks year round. They are relatively easy to prepare and soak up the flavors of whatever dish you are cooking. Packed with high amounts of fiber, folate, iron and protein these little guys are full of nutrition. It’s insoluble fiber adds bulk to stool and helps prevent constipation, while its soluble fiber helps shuttle cholesterol out of the body.

This soup was so delicous and filled with tons of antioxidants and fiber from the lentils and vegetables. Don’t be intimidated by the idea of lentils if you have never eaten them before. The red lentils blend well and soak up the flavor of the broth. I even got my very picky brother to eat a bowl!
